Visit the Cathedral of Monreale, Palatine Chapel, Palermo Cathedral, Opera House among others..

There are a couple of interesting food markets and a good archaeological museum as well.
But it depends to a considerable degree on your interests.
Outside Palermo you have Cefalu along the coast to the east (easy by train) and Trapani/Erice, plus some other sights over in that direction, which is west of Palermo. Unfortunately, public transportation to the west isn't terribly efficient and your time is short, so I'd suggest car rental if you want to head in that direction. However, you don't want to drive in Palermo, so you'd need to investigate car pick-up points for ease of outbound highway access.
