We will be driving from Dobbiaco to Santa Margherita Lingure area on the coast. We need to fill up 5 nights before we arrive in Borolo for a weeks stay.
We don't usually like to drive into larger cities for our accommodations and prefer the quieter countryside towns/villages.
Any recommended places to stay and or eat along the way? We will have done Modena, Venice,and Milan earlier in our travels.

Are you planning to stop in one place for those 5 nights, or several different places?
We were thinking of 2-3 nights. But also one night in route to a destination. We're now thinking of taking a more northern route and go as far as Bergamo or lake Iseo and avoid Garda due to crowds. We would stop in Varena but we were just there 2 yrs ago.
Thinking that we would avoid the coast at this time and travel west and then south through Turin as we do want to visit Turin.
We leave June 27th and need to arrive in Barolo on July2nd. So trying to figure a somewhat relaxed way of getting there and at the same time taking in some sights. We don't want to drive more than 3-4 hrs in a day.
In late June / early July you will not have the worst crowds. School holidays will only have started in a few places in Europe, not all of them.
So, I don't think you should rule out Lake Garda (and it's not like Lake Como will be better ;). Iseo, yes, fewer crowds, but not Como).
Now, if you want a northerly route... There's more to the Italian Alps than the Dolomites. For example, you could drive west over Stelvio Pass to Bormio, stay there for a night or two, then head south-west to Bergamo or lake Iseo, and to Barolo from there.
Turin is an easy day trip from Barolo. Sure, there's more to see in Turin that what a day trip allows, but I still think you can get a great overview in a day.
