We will be returning a car to Pisa airport and would like to see the tower and other sights before catching a train for our next destination (Monterosso al Mare). How might we do this logistically? I'm thinking people mover from airport to central station, drop luggage in storage, then go explore? Will we be able to easily get to the people mover after we return the car?

Then from here drive all the way to La Spezia, where you return the car (rental car offices are near the cruise port). Then take a taxi to the La Spezia Central station and finally a short train ride to Monterosso.

The problem is we will be doing this on a Sunday and it doesn't look like the rental car offices are open in La Spezia on Sundays :(

We have the same situation as you. We too are returning our rental car at Pisa airport on a Sunday (because it is the only option on a Sunday). We have never really given much thought to Pisa in previous trips, but since we are there, we might as well explore. We will then be headed to Riomaggiore. We had the same exact plan as you. Take people mover to Pisa Centrale, store bags and walk to sights.
Glad we aren't the only ones with these ideas :) Like you, Pisa wasn't on our "must do" list but we figure since we will be right there we might as well check it out.
I haven't been able to find the exact logistics of how this will work - specifically how to get to the people mover after we drop the car at Hertz - but I am confident we will be able to figure it out.
The people mover station is right near the airport terminals. There is a free and frequent shuttle bus from the car rental center to the terminal area.
