Pilgrimage of St Francis

While in Italy, I would like to do a modified St Francis pilgrimage. I know that his original journey started in La Verna and took him through Assisi and onto Rome. My plan is to start in Assisi, get the story of St Francis there, spend a couple of days and then walk to La Verna. I would be doing this with friends and we would be wanting to stay at BnB's, monasteries, simple accomodations along the way. We would also be stoping for picnics or family run restaurants when available. Can anyone point me in the right direction as far as finding information on the actural route (map preferably), and any restaurants and or accommodations that cater to pilgrims making this journey. We realize most of the pilgrims will be headed in the opposite direction.

Any help would be appreciated.

We live part-time in Liguria near the Via Francigena, another major pilgrimage route. Your undertaking is not easy and you need to be quite fit and well prepared. You also need to consider time of year as the heat in July and August has stopped many a pilgrim.
The Assisi Basilica website references these websites in reference to the pilgrims traveling by foot:
