Has anyone stayed in this area and provide us with information on winery, cooking classes, other things to do?

Did you look at their website? They have some info there.
Also they should be able to provide some info if you write to them.
That place is famous for Pinocchio (the author was from there) but they might have cooking schools nearby.
The Valdinievole (Nievole Valley) is not particularly famous for wine but nearby is the area where they produce the Chianti Montalbano. The owners of Pietrabuona should be able to recommend some good wineries. My father used to buy wine in that area, near Vinci, Leonardo's birthplace.
