I'm planning on keeping my iphone in airplane mode unless I have Wifi service. Will I be able to listen to the audio Aps I've already downloaded? (Obvious to some... But not me...:) )

Once they are downloaded - best done at home before leaving - they are just regular MP3 files and can be played at any time without needing any data at all.
Download then leave in airplane mode. If you missed one, download it when you're in your hotel and have wifi.
