pasta making in Florence; Chianti wine-tasting daytrip in December?

Hi all,
My husband, 2 young adult daughters, and I will be in Florence for 5 days and Rome for 5 days in December, at the tail end of the college daughter's study abroad semester in Florence. We'd love to do a pasta making class and wonder if anyone has had experience with either "Pasta Class Florence - Nonna's recipes" or "Towns of Italy". Or, if you have a different recommendation- there are so many I'd love to hear from someone who had a great experience at one!
Second question is whether it's worth doing a 1/2 day trip out to the countryside for lunch & wine tasting in December, or if that's sort of a bust that time of year. In the latest RS Italy book he recommends Tours by Roberto & I've communicated with them and they seem great.

We both enjoyed it a lot. I take classes when I am traveling each year, and then make the recipes at home a lot. I have made all of the dishes we learned in the class, and I enjoyed the chef’s personality & skill. Two thumbs up recommendation. : )
