Hello.
There are two pasta companies in Fara San Martino. Does anyone have information on how to book a tour or one of these facilities? I've looked at the websites but I can't seem to figure it out.

Google's AI tells me De Cecco does not offer tours of it's facility. There is a retail outlet associated with the Fara San Martino factory, but that seems to be the only option. If you must have a pasta town, have a look at Gragnano near Naples:

I don't think any of the manufacturers in FSM offer tours and certainly not tours in English.
If you were in the area, you could stop by and ask if you can take a look.
Might work, might not, but you have nothing to lose.
That's a beautiful area of Italy.
