I’ve taken a couple of different cooking classes from Florence. One was with Florencetown - a group of about 15-20 people. Started by going to the market to buy ingredients and taste cheese, oil and Balsamica, then to the kitchen where we made ravioli, tagliatelle, rags and tiramisu. This was a pretty good class, but by far my favourite, and one that I’ve taken twice, is a wine tasting/cooking class with Accidental Tourist! Group size is 8. They pick you up at a meeting place, then drive out to the country to a small winery for a tour of the winery and tasting, then to an ancient house for the cooking class. While you make ravioli and tagliatelle a chef makes a couple other courses. Both are good, but the small group of AT, and the drive in the country makes it a really special experience!
