We were staying at a beautiful mountain resort called Gargonza near in Tuscany and had a great pesto dish and I think the waiter called it zitti or pitti pesto does anyone know what type of pasta that was served ,maybe a combo of potato and flour based pasta.
If it is tube shaped it is ziti but the potato based item is gnocchi and sort of oval shaped.
The dish is called "trofie al pesto," which is a very typical genovese meal. It is also often served with bits of potato and/or green beans.
To elaborate on Karen's post, Trofie is a special Pasta made specifically to be served with Pesto. It's rolled by hand into small "squiggly" shapes. It's made with flour and water but without eggs. This might be what the Waiter was referring to?
