You won't have time for a top ten, I suggest you pick three. Is Monreale something you want to see that day?

What's your plan? You posted that you plan to drive from Santa Flavia to Monreale. Is that on a different day?
The two things that most stand out in my memory are the Old Palermo self-guided walking tour, copied from Frommer's website, especially San Giovanni degli Eremiti and the Palatine Chapel, and the Ballaro market.
