We really enjoyed Palermo. You also might like an easy daytrip to Cefalu, a fun seaside town. If you are a bit industrious a day trip to the Valley of the Temples in Agrigento is amazing. Unforgetable Greek temples. Can be hot though so depends upon your dates.

The Monreale Cathedral at Palermo is a UNESCO World Heritage Site. Amazingly beautiful. If you get weary walking about town, by the way, there is a hop on/off bus you can use for a bit of a rest.
