We are traveling to Italy during the holidays (December 23-29, 2014). We will be in Venice December 23-26. In Florence December 26-29. We are wondering if all the sights are open? What itinerary would you do for these days? What restaurants to recommend?

I would think the only day that would present a problem would be Christmas day - but to make certain you could always look at the websites of the attractions you would like to visit during your trip. I would imagine the Vaporetto still running on Christmas - so riding up and down the Grand Canal would still be a lovely way to spend a part of the day. Just walking around Venice is a big part of what I do when I'm there and that would obviously still be available.
If you haven't already, you would benefit from reading a travel book or two to narrow down exactly what you want to do. There will be plenty of things available for the limited time you are there.
December 24 and 26 may present some issues for opening/closing of sights or shortened hours, best to check the individual sight's webpage or a guidebook as suggested above.
