Will be spending a week in an apartment in Orveito early next May.
Will arrive by train but will probably rent a car for the week so that we can visit several towns nearby.
Don't mind driving an hour or so and enjoy spending a day shopping and taking in the sites.
Any suggestions as to were to go and possible day schedules.

If your shopping desires include ceramics, definitely visit Deruta - it appears to be ~20 miles from Orvieto.
Todi, by all means. I am not sure how long it would take to get to Trevi, but I love it. Cortona, Gubbio...so many places! One day, just start driving and stop where something seems interesting.

I'm assuming you mean Orvieto. You could also visit the small town of Civita di Bagnoregio, which is featured in Rick's TV shows. I haven't checked on the driving time from Orvieto, but Assisi is also worth a visit. Be sure to park outside the centre, as there are ZTL areas there.
Cortona or Assisi get my vote
Pitigliano is an evocative town in a fantastic setting, especially viewed from the west. It has a really interesting Jewish history, neighborhood, and Jewish museum which includes a network of underground facilities such as a bakery, ritual baths, etc. Around the town are a network of mysterious Etruscan roads, called Le Vie Cave or Sacred Ways, which make for some unbelievable hikes. Nearby the towns of Sorano and Sovana are also worth a visit.

Tarquinia
Siena
Gubbio
Lake Bolsena is very close, quiet charming towns on the lake.
