Have any of you visited Ortisei in May? We're planning on being there from May 25-30 next year, and are now realizing that the lifts aren't all open and many hotels are also not open. Is this area worth visiting during that time (we'd like to hike & mountain bike)? Or should we reconsider and go to other areas? Or move our whole trip (and wedding!) forward a week or two?

A lot of lifts will be open. But trail conditions is a total crap shoot. This winter had very little snow, so they were probably in great shape on May 1. This year could be a record snow year and then everything will be late. Who knows, but if you figure out how to predict it accurately, you'll be rich beyond the dreams of Croesus.
I would not go until mid-to-late June. I like some assurances of good weather. We were in Ortisei mid-September (left on the 19th) and did NOT have reliable weather, a real surprise in September. We will probably not go later than first week of Sept in the future, but July was heavenly last year.
