East-west-north. Val Gardenia area or Trento area. Venice will get you to the north. Bassano de Grappo will get you to the lower east side and slightly north. With bikes and a car we stayed south of Bolzano at Kaltern area. We are cyclist and we have followed Giro routes more than once.
Stay in the mountains and they're all good. Val Gardena (Selva, Santa Christina, Ortisei) is as good as any. Most hotels have parking.
My vote would go to Cortina D'Ampezzo.
I'm there at the moment and was here 7 years ago.
What a spectacular site
I'm in Val Gardena right now, and it's amazing! I might combine it with a couple days in Cortina D'Ampezzo though so you can see more sights!

Just returned from the Dolomites. We stayed in Selva in the Val Gardena. It's a great base area. No need for a car. Excellent bus service. Planning on returning next year. So many hiking options that we barely skimmed the surface. Just a stunning place. Wonderful people and great cuisine.
