trying to make a decision....we have one free day and night. Orvieto or Volterra?????

Steve: I don't know where you're going to be starting your one free day and night. Orvieto is just over an hour north of Rome on the train route to Florence. Volterra is west of Sienna, and is not serviced by trains.
Therefore I would say Orvieto is a better place to go on a short tour. We spent one day and night there before going into Rome, and really enjoyed it. Another incredible travel sight close to Orvieto is Civita, another hilltop town southwest of there. It's well worth seeing, and can be reached by bus from Orvieto.
