We will be in Lucca for a few days this summer 2016, and would like to hire a tour guide and driver+car to take us into the countryside around Lucca - especially to see an olive grove/oil making place and a winery, and just to see the rural aspect of Tuscanny. We are not renting a car. I have looked at some of the tour guide sites but was hoping someone who has done this or something like this could give us a recommendation. Thanks!
I haven't done what you plan, but a TI office or your hotel in Lucca may have suggestions.

From what I gather its best to rent a car in Tuscanny. I will be there next week for 2 weeks and cant imagine exploring the country side without a car. But either way have fun !
wsh we hired Wanda Martinelli for a half day walking tour of Lucca and it was really a good choice. We did it the first morning in Lucca and it set us up for planning and touring on our own the next couple of days. She is really interesting and did our tour (just my wife and I) in the pouring rain for much of the tour. She is very flexible and a joy. This was the first private tour I have ever taken so at first the price was somewhat worrysome but it ws money well spent and very competative as I check out upcoming private tours at other locations.
