We recommend withdrawing euros from an ATM in Italy using your debit card, usually one with a Visa or MasterCard logo on it. That gives you the best exchange rate and ATMs are available all over. See https://www.ricksteves.com/travel-tips/money/cash-tips and related articles in that section.
