Adding on 3 days from Milan to see Christmas markets in northern Italy. What do you recommend in Brixen, Merano, Trento and Bolzano? Is it possible to do all 3 in 3 days? Any hotel recs?

You can definitely visit the Merano, Bolzano and Brixen Christmas markets in 3 days. From Brixen, you could even add a visit to the Christmas market in Sterzing / Vipiteno. It's smaller market, but the setting is incredible due to the medieval feel of the town. Depending on when you visit, you may want to also consider visiting the Christmas market at Tyrol Castle just outside of Merano. It is another magical place to experience the season. As far as hotels, there are so many great options that I would simply pick based on being as close to the center of each town as possible so you enjoy everything on foot. Have a great visit!
