We love seafood but, when a reservation fell through, we had an exceptional meal at Procopio Pizzeria.
It sounds like you're OK (as I am) if the restaurant has seafood as long as it also has other options. I'm not allergic --- I just loathe seafood.
My husband has been finding us restaurants we like in Italy for many years. How he does it is complicated. I do pretty well myself just using google maps to find well-reviewed places, then looking carefully at the photos and the menu. I pretty much always eat only from the antipasti and primi sections of a menu --- remember that there are things like flan or sformato if you want something that is not pasta.
I wish we'd kept better track of where we ate in Palermo. We often ate at markets and street food places, also cooked at the apartment.
Here's the three places I remember really liking --- only one is a restaurant, though.
Trattoria Trapani — small and simple, very good food, you might need reservations
KePalle — arancine (the best I had was the Pistacchio Vegana arancina at Kepalle’s airport location, I think because it had just been made)
Dolce Capo for gelato — the best pistacchio gelato I’ve ever had and I have had a LOT

Here are some of the places my husband picked out using his special system, but we didn't actually eat at:
La Majolica — sandwiches
Biga — pizza
Moltivolti — Sicilian/African/Middle Eastern, lots of vegetables
Ninu Ballarino — street food especially panelle
Bartolo & Sons
Osteria Pane e Alivi — traditional osteria
Sapori Perduti --- interesting traditional

I'm not sure I'd go to a restaurant called "KePalle".

Palermo has hundreds of restaurants and I doubt there is a single one of them that couldn’t come up with something good that isn’t seafood, whatever your budget or location. If necessary (not that it should be) just ask for something like pasta à la Norma (with tomato and eggplant) and they will make you that even if it’s not on the written menu. There’s a street in the center with dozens of restaurants called Via Maqueda, many of those are very touristy and not the best food in the city, although I’m sure you can get a decent meal in most of them.

years ago my cousins would go pig hunting in the valleys along hamakua/waimea/waipio. come home with their 300LB prize to clean 'em up. we callrd them "mountain oysters". season, bread/panko 'em and fry them. served as pupus!!! mahalos for the laugh
