Our trip is Portugal and Southern Spain but returning back from FCO wanting to try out the new Alaska Airlines nonstop service from FCO to Seattle. We have two nights.
We have been to Rome a few times and know our way around well. Standard sightseeing isn't on our agenda this time. Our only firm plan is the ticket reservation at the Borghese Gallery. Aside from that, we just want to relax, slow down, and enjoy some incredible Italian food. Instead of staying in the chaotic city center, we would love to book a nicer, upscale hotel outside the main tourist hub—somewhere with an authentic local vibe and great neighborhood dining, but still manageable for our gallery visit. Any recommendations? Than you -:).

Take a look at the Aventino Hill neighborhood. It is in Rome, but in a much quieter area. There are several boutique hotels. Also, you are close to thr Testaccio neighborhood whick is full of great Roman resy.

If you want to abandon all ambition and want to treat yourselves, there is a wonderful spa hotel near FCO airport. I just spent a night there recently before a trip with a friend who was on your same flight to Seattle. It allowed her lots of time to enjoy their great breakfast (I had to leave very early, before breakfast.) We enjoyed a wonderful buffet lunch, then soaked in nearly all the pools, steam rooms, saunas and waterfalls until we were completely waterlogged. Then a great apericena included, no need for dinner. Indulged in more water features after apericena. Slept very well. The food is great, gardens are beautiful and the water features very sybaritic. It's now my go-to place before or after trips from/to FCO.
P.S. It's built on top of the Roman Port of Traiano, so you can even see some Roman ruins while strolling the gardens. It doesn't really fit well with Borghese Gallery and neighbourhood restaurants, but I thought I'd throw out a different option.

@Nelly, Giving up Borghese is not an option for us. We were not successful for getting tickets in all previous trips to Rome. This time we finally have the opportunity to visit.

I've stayed at Villa San Pio on Aventine hill the last couple of times. It is quiet and leafy and Villa San Pio itself has a nice restaurant. otherwise, as mentioned, we have walked over to Testaccio.
