We’re thinking about going from Paris to Nice. In Nice we would like to do several day trips by car and train .. We made reservations at the Hyatt and Le Meridien . Which hotel do you recommend? Several people told us Nice is not very “nice “ and they would not stay in Nice . Is this a bad choice?

Nice is a great city and 'several people' are idiots. Both hotels are well located and expensive. You will find car trips from those hotels fairly tedious as the Cote d'Azure road network is dense. The train station, however, is a pleasant 18 minute walk, and the new Nice tram line is just steps away from the hotels.

We loved Nice. As mentioned above, you can train to most destinations quite easily from Nice.
I wasn't one of the several people.
There must be a reason I returned (until covid) annually to the Riviera, and stayed in Nice, several of the towns between Nice and Monaco and, my personal fav, Monaco. I couldn't afford the two hotels you list but I see no reason that they won't be spectacular.
And I completely concur that driving around the Riviera is slow and difficult in the season... I always went in January or February (and just a few times in May) and either drove from home in England, flew from Gatwick or took the TGV (usually).
