need advice on 2 weeks plus in sicily and road trip back to Rome thru Calabria

Hi Folks
My wife and I have nearly 3 weeks end of april and are planning on 2 weeks (or more?) in Sicily using the RS book itinerary by car. We fly into Palermo thru Rome. Since we have nearly 3 weeks, I'm thinking we'd rather drive over several days back to Rome airport and make stops along the way. We have family in Caserta (is right on the way to Rome) and also in Villapiana Scalo (more out of the way). We don't mind driving/exploring and it seems the hassle and cumulative hours it takes to drop off rental car in Catania or Palermo, fly to Rome and possibly rent another car to visit Caserta- why not just make a several day road trip back to Rome.

We wd appreciate suggested stops over a few days between our last stop in Sicily (prob Taormina) and Naples/Caserta, with a few hours of driving each day. I visited Calabrian family decades ago, just not sure if its too rustic for a road trip (and my wife)
OR do you disagree with my thinking and rec whole time in Sicily -- suggestions for more time in Sicily beyond the RS book are welcome (we love food, food markets, light to moderate hiking, but we DONT need to relax on a beach as we live on a beach in Florida.
