Try Giuseppe Aulisa of Florence Tour (www.florencetour.com; info@florencetour.com). Guiseppe and his wife, Paola Migliorini, own the company and we took a day trip into Tuscany from Florence with them in 2011. Paola will most likely be the one to answer your email. I highly recommend them.

Also try Walk about Florence. They have several options available that are well recommended. I did the CT tour and it was awesome!
