Planning on taking the circumvesuviana from Naples to Sorrento. We will be stopping in Pompeii Scavi to tour the ruins. Do you know if we buy a ticket from Naples to Pompeii Scavi, then a second ticket from PS to Sorrento? Or can we buy one ticket from Naples to Sorrento and get off once then back on?

No. Buy separate tickets.
Even with a biglietto integrato, Once validated, you need to get on board and within 180 min complete the trip within that time.
The only way to get around that is to have a very supershort visit, but that would make no sense since to visit Pompei you need at least 2 or 3 hours. The tickets are under 5 euro, so why bother?

Ditto to Roberto's advice: you should buy separate tickets, and they're cheap and easily purchased at the stations. Remember to validate them before boarding!!! The authorities are especially vigilant on this route, and fines are steep if getting nailed with unstamped tickets.
