We would like to travel from Paestum south to Sapri on a Regionale train, then catch the IC723 to Taormina the following afternoon. The Paestum train station is apparently unmanned. How do we buy a ticket? In Naples a couple of days earlier? If so, does it have to be for a specific time? Can we wait and buy one on board?

If you buy a ticket for a regionale train you won't have to commit to a specific time, but there is a calendar period for which the ticket is valid (I think it's a couple of months). Yes, you need to buy the ticket in advance because the station is unstaffed (there may be tourist info people there but they can't sell you tickets). As of last year there were no automated kiosks, either.
