We will arrive in Naples at noon and will be sleeping in Sorrento that night. Would it be too much to go to the archaeological museum that afternoon? It's the only time we can fit it into our schedule and I really want to see it, but everyone says you should take it easy on the first day and I don't want to go there only to feel like a zombie. I have been to Europe once but it was 15 years ago and I don't remember how I felt that first day.
If you are going to go to Pompeii then yes, go to the museum. It really helps you understand Pompeii if you have been to the museum.
If you're flying in on a long haul flight I would say not to visit the museum. You really shouldn't plan anything that requires a lot of attention the day you arrive from overseas. You really aren't at your best and won't get much out of it. I would try to fit in in somewhere else or plan another trip where you can fit it in.

Please do not be put off by all the negative comments about jet lag. For some, it doesn't exist or is just a little bit of tiredness. Lots of folks catch sleep on the overnight flight. Jet lag is really very much over emphasized, imo.
Go to the museum and see how much you feel you can absorb.
If you are arriving by plane and landing at noon, you probably won't be at the museum before 2 or so, and you'll be shlepping your luggage with you. Then you've still got 20-30 minutes to go back to the train station, then wait for the train to Sorrento (runs about every 1/2 hour) and an hour or more on the train to Sorrento. Then you have to get to your hotel. If you've packed light, only carry-ons, you'll be more efficient. Much as I enjoyed the museum, I think you'd be better off just continuing on to Sorrento from the airport. I went to Pompeii and Herculaneum before seeing the museum, and I liked all three, didn't feel I'd missed out by not seeing the museum first.
Well, I've been talked out of it, then into it, then out of it again- ha ha! Maybe the best plan would be to see how we feel when we arrive and decide then. It's a group of 6, so who knows. I will just need to be mentally prepared to not be disappointed if we don't go. We can practice being flexible, which I think will be a good trait for the whole trip.
