Must-See Attractions and Activities in Puglia

My husband and I are visiting Puglia this spring (end April/beginning of May). Our itinerary is as follows: Monopoli (3 nights), Otranto (3 nights), and Matera (3 nights). We have a car rental. We're hoping to get some suggestions on must-see attractions and activities in the region. We would like to explore a few national parks for hikes, visit interesting towns, and go on a boat and/or bike tour for a day or afternoon. Our time is limited, so we want to spend it wisely. Any suggestions on highlights are welcome. We also are interested in your suggestions of must-go places to eat, bakeries, or cafes. Thank you in advance.

I was in Puglia last May and really enjoyed it! I am also going back this May. I did go on a boat tour in Polignano a Mare (near Monopoli) and rented an ebike from a company who does bike tours around Alberobello/Locorotondo. The details are in this trip report.

The Pasticciotto pastry is amazing! I can’t wait to have them again!

We especially enjoyed hiking in Laterza gorge, near Matera.
Near Otranto, there are some coastal parks and you might want to check out the WWF refuge at Cessina.
Near Monopoli, walking or biking the Itria valley is beautiful. There is an aqueduct path also.
