I am arriving in Bari at 1730 on the ferry from Dubrovnik. My final destination is Padua or Venice. What options do I have to head north in the evening from bari? Thanks

Fast trains are not an option as they need 7 hours or so to Padova so you do not have enough time to complete the trip within the day. Night trains are possible, most likely with a change in Bologna quite early in the morning. There flights from Bari on Volotea to Venice and on Ryanair to Treviso till quite late in day so this may be the best option.
