Cannot recommend highly enough La Moscadella (outside of the tiny town of Castelmuzio) for dinner and/or an activity and dinner. For example, we did a pici pasta making class followed by a traditional Tuscan dinner. Fabulous!!! La Moscadella (run by The Isabella Experience) is about 15-ish minutes from Pienza. A tour of the family's farm just outside Pienza is also tops. All the activities and events curated by The Isabella Experience are unique cultural experiences. (Ha! Can you tell we loved it? Also, just outside Montepulciano we had a wonderful picnic @ Cugusi Cheese farm overlooking the rolling hills and Montepulciano on its tippy top hill. https://caseificiocugusi.it

The town of Bagno Vignoni is also great. We didn't go to the hot spring/spa there but if we go again I would do that in a heartbeat.
A second vote for the village of Bagno Vignoni, a great day trip from Montepulciano. The spa with the hot springs is incredible and a provides a good break from the usual sightseeing. And there are the Roman baths in the center of the village, just beautiful.
