Coming to Milan for just 1 night in October. Looking at train schedule from Florence Santa Marie Novell to either
Milano Centrale or Milano Porta Garibaldi. Staying close to the Cimitero Monumentale. Should we just come into Centrale and
take a taxi or arrive via Porta Garibaldi and leave out from Centrale to Venice the next day. Don't want to make any connections.
Any thoughts or ideas? Grazie!

There are few direct connection from Firenze SMN to Porta Garibaldi - something like 4 direct trains per day on Trenitalia, while it looks that Italo no more serves the station.
However, Porta Garibaldi is deceptively close to Monumentale. It is something like 15 minutes walking, but if you have luggage it would be a bit on the longish side.

Both train stations are very close to each other, just two subway stops away, or a 5-10 minute taxi, so there or no reason to worry, either station works fine.
The cemetery is a little closer to Garibaldi.

I didn't see any direct trains from Porta Garibaldi to Venice for our departure. If I missed any, let me know.

You did not miss anything. The direct service to Venice is only from Centrale
