For traveling in and around Milan, does anyone have any suggestions on what transportation to use (eg. train, Uber, taxi, etc.)? I will mostly be sightseeing around Milan Centrale, Duomo di Milano, Galleria Vittorio Emanuele II area of the city.

Uber operates in Milan
We stayed near Milan Centrale and visited the places you listed. We bought an all-day pass on the Metro and it worked very well. We also walked a lot.
You can buy a transport day pass at Tabbacchi shops all over Milan. Easier than trying to use the vending machines in Metro stations here you are liable to be surrounded by "helpers".
Day pass is 7 EUR.
We recently took the tram from near the train station to the Duomo. It was really fun and no other passengers were on it.
