While looking at several menus for Milan and Lake Como I keep seeing parenthetical numbers after the food descriptions (1,3,4,7). Can anyone tell me what they mean?

I'd need an example to be sure but those are probably part of the extensive reporting that is required in Italy for nutritional and dietary information. These probably refer to vegetarian, vegan, contains nuts/gluten etc. and there is a corresponding guide in the back of the menu that explains the options.
If you have an example everyone can confirm this but this is my guess,

They are usually the potential allergens ( milk, soy, eggs, gluten, seafood, nuts, etc.). There should be a key at the bottom of the menu.
Have a look at the answer on this website. Although the comments here apply to the Czech Republic, I believe the numbering is an EU requirement so would apply to Italy as well.....
It’s the list of the 14 allergens that must be displayed in the menu according to a EU directive issued a few years ago.
Here is the list.. I picked this one from Ireland since it’s in English, but it’s the same list in every EU State..
