I’m landing in Milan at 10:40am and trying to figure out how long to get thru customs. I have 1 hour to get on my train from the airport to Milan Central Station and have to pick up luggage and get thru customs. Is 1 hour long enough or I’m I screwed? I have a connecting train that leaves from Milan Central Station at 13:05. I can take a later train from the airport but it gets into the station at 13:05 and I don’t think 0 minutes is long enough to transfer trains.

I guess you'll just have to hope everything goes smooth and you make it. Buy a pre-validated ticket on-line for the 11:43 Malpensa Express. That will save a couple of minutes if it is tight. If you are late, at least that ticket will be good for a few hours.

There's also the issue of trains being late and or canceled.
Are you also doing the reverse route at the end of your trip, Milan Central back to Malpensa ? When we were there in April, our train to the airport just disappeared off the board- canceled. We had to take the next train, about 30 minutes later. We made our flight, thanks to no major lines at the airport, but we had a very stressful wait and [about] 50 minute train ride.

No not the reserve trip. I haven't booked my hotel for the night before I come back yet. The ticket I bought from Milan Centrale to Venice is super economy and 1st class but doesn't allow me to exchange it or get a refund, so I gotta try to get out of the Milan Malpensa (MXP) airport in 63 minutes to catch my connecting train in Milan Central to Venice.

If you are coming from another Schengen zone location, you do not need to do the passport control/immigration process which will speed your journey.
Otherwise I suspect or I’m I screwed? may apply

You need to give yourself at least an hour to clear customs and get your luggage if you checked a bag. The Malpensa Express is another 50 minutes from there. Not allowing yourself one hour to get off and clear the airport is pushing it.
