Is the train at the airport still the best (and fastest) way to get to the Milan Centrale train station? Does anyone know where I can find a schedule?

Hopefully those are up-to-date, but they should give you some idea.
Schedule available on the website. I'm not sure if it is"the best" as it depends on a number of factors including where you are staying. We used it last time and it worked fine for us. Make sure to take the express (about 50 minutes). 12 euro I think.
The info given above by the previous commenters refers to the Milan Malpensa airport (MXP). But that is not the only Milan airport.
If you are traveling on a European airline from another European hub, it's possible that you might be flying to Milano Linate (LIN), since most EU flights arrive there (MXP is mostly for intercontinental flights and low cost airlines, EasyJet in particular).
Please confirm which of the two airports you will be flying to.
If it's LIN, then that airport is only 5 miles from the city center, and a taxi would probably be the best option. There is also a bus that connects LIN to Milano Centrale station. There is no rail at LIN.
We used the bus from Malpensa to the train station. It's 10E each. Takes about 50 minutes (depends on time of day)
As Roberto said, if you are coming in to Linate, take a taxi, this airport is much closer to Milan Centro...
you can also take the train, but note, it leaves from Terminal 2, not Terminal 1, and if you are coming in on a connecting from from within Europe, good chance you'll be at T1.
