We are considering spending some time hiking the La Palud to Chamonix area, town of Aosta, cable car to Aigulle du Midi, etc., but are concerned that in mid-May the area may still be too winter-like to enjoy. We would appreciate any information as to the weather, if trails are still snow covered, etc. in this area.

I don't know that specific area, but in general, anything at 2,000 m elevation or above (give or take a few dozen meters) may still have a significant amount of snow. Some portions of the trails may not yet be passable.
