For those who have traveled recently (i.e. during the pandemic)…are tickets to the Medici Chapels or Palace available “at the door,” or should I plan to purchase them online in advance? I am trying to get a sense of (during the pandemic) which sites that “normally” could be entered on a flexible schedule now need to be reserved. We’re traveling in May 2022.

There's no indication that tickets aren't available at the door; their website says, "Tickets are also available for purchase online." Hopefully someone else can answer how busy this attraction has been, although it will certainly be busier in May than it has been this past winter.

As far as a "palace", if it's Palazzo Medici Riccardi you're asking about, it doesn't look like they sell advance tickets so no issue with "at the door" there:
