We are planning a trip in early May. Due to schedule limitations, I can't see a way around being in Venice on that day. The day before is also a Sunday. We would arrive on Saturday and have Sunday and Monday (May day) to see Venice. Possibly part of Tuesday before we take the train to Rome. Between it being Sunday and May Day, will we even be able to see/do anything?
Have you checked the websites of places you want to see to determine if any are actually closed in those days?
Just as example-St Mark’s Basilica, piazza and Doges Palace will be open
Vaporettos will be running
Other churches will be open
You’ll need to check various museum sites according to your interests but most if not all will be open on Saturday/Sunday
We were in Florence this past May 1 and hardly noticed it was a holiday other than the big crowds
( Italians go sightseeing too)

I think most museums will be closed, but Venice has a lot of open-air sights that you can focus on. Most restaurants, some shops and all churches should be open.
Just make sure you book your lodging early - I was in Italy many years ago on May 1st and talked to several people who were trying to find rooms with no success, due to the holiday.

Accademia, Doges' Palace, Peggy Guggenheim Museum, Glass Museum of Murano, are all open on May 1.
Churches should be open as well.
