Does anyone have any experience or planning in this area. Do not wish to drive. This area would be the focus to our trip.
I do have a lot of experience in Maremma, having gone there many times when I lived in Florence (although haven't been back recently). But what exactly do you need to know?
For sure I can tell you that you will almost certainly need a car. It's a rural area, so the public transportation options (i.e. buses) are very limited to non existent (especially on Sunday). So get used to the idea of wishing to drive. I'm sure you drive in Oregon, so you can do the same in Maremma, which is just as rural or even more so than the area of Oregon near you.
I have not been to this area but have read a lot about it in anticipation of one day visiting. I have to concur, a car is going to be needed unless visiting the main, larger towns of the region. I found a book about the Maremma region on Amazon, and there are a few websites as well.

We spent several days in the area, a couple of years ago, and loved it. If you decide on a car, I'll go into detail about the places we visited. I don't think it's at all practical to imagine you can get to them in any other way.
