Marche-How booked will Agriturimos be in September?

My wife and I are planning a trip to The Marche in September. We plan to stay in farmhouses/Agriturimo and will book some in advance, but I don't want to have the whole trip booked. I'd like to have some flexibility. Generally how booked up with they be at that time? Thanks
