We will day trip to Ravenna (first visit). I would welcome any recommendations for restaurants for lunch. It does not matter if located far from the city center as we have the day to wander about and see the sights.

I really enjoyed the Ristorante Amaranto, on Via Mura di San Vitale (so quite central). https://www.amarantoristorante.it/

You might try Ca de Ven, known for traditional local foods, near the center of town. Delicious, not fancy, not expensive.
The mosaics in Ravenna are really incredible! Especially at the Basilica di San Vitale, I really would have valued being with a really good guide, a person not just a book, or at least an audio guide if one exists. The mosaics are up above, very high, and I found it very difficult to constantly look down to my guide book, then up to the expansive and detailed mosaics themselves. When I was there, back in 2014, there were a couple groups there with guides, and I envied their ability to just look at the mosaics, while their guides explained them.

Re: seeing the high-up mosaics- I brought a pair of small binoculars, which really helped.
