If you're leaving from Termini station, use this.

Just make sure you add in some time to pick it up. Be aware if you're on an international flight you will need 3 hours at the airport.

Thanks Gerri. We don't have a specific plan that day yet, and will be taking a taxi back to the airport since there are 5 of us. We could get our bags to Termini, however, and therefore we would be in a central area to return to the airport once we retrieve them.

The express trains to Fiumicino Airport do leave from Roma Termini, every 15min

You had said you intended to rent an apartment, will they not hold your luggage for you? Which area of Rome are you staying in? Since you plan on a taxi, there may be a closer luggage storage.

We asked if they could hold it, and they referred us to Luggage Deposit. I believe there is a new occupant coming in the day we check out. The apartment is near the Spanish Steps, so while it would be nice to find a place to drop the bags near the apartment, I am not sure where we will be out and about that day (probably not up in that area). It definitely throws a little wrinkle in the day, but gotta work with it.
It seems more economical for 5 people to take a taxi from Rome to FCO (48 Euros if I am not mistaken?) than a train for 14 Euros/pp. Although the train does eliminate the traffic factor.

Taxi will defiantly be cheaper, and at Termini there will be larger vehicles. Might be slightly higher for 5, may also be a €1 charge per bag for luggage.
