Staying in Lucca for 3 nights. Any winery tours or sightseeing recommendations?

You can go to Pisa for a half-day. Lucca is such a lovely town, just walk around. Get tickets to one or more of the Puccini concerts - some are free. Walk the walls, climb the tower with the tree on top.
Lucca produces great olive oil, you may want to go to a tasting.
