I'll be in Lucca for 3 days in late September and I was hoping to find an organized day trip to either do a wine tasting tour, or to see some of the highlights of Tuscany. There's a couple of wine tours that I tried to book, but there was a 2 person minimum which leaves me out to luck as a solo traveler. I'm just wondering if anyone can suggest any options as I would really like to get out of town for one of my days. Thanks.

Lucca is well connected and list of possible day trips by train: Florence, Pietrasanta (arty, they also have a medieval festival in Sept), Barga, Pisa, Viareggio (blue collar beach resort town), Forte dei Marmi (upscale beach town), Castelnuovo di Garfagnana (hill town).
Also FYI when I was there in September the city had arranged a month long collected wine tasting of local wines in Palazzo Pretorio just off P. San Michele. Hopefully they'll be doing the same thing while you are there.

I know many online bookings require minimum of two participants.
Assuming your not trying to book a private tour, try sending an email directly to the operators of the tours (not the 3rd party booking co. like Viator) you're interested in. Let them know your dates and that you would love to join one of their tours if they have other participants booked.
I did this in Alsace for a wine tour a few years ago. The owner emailed me a week before the tour inviting me to join another couple who had just booked. We had a wonderful day. September is a long way off. You may need to try again closer to your trip.
