Our family trip will include Rome, Tuscany (central and northern), Florence and Cinque Terre. Our itinerary is still in the works and these are activities that have been suggested to add to our trip. As for the Pasta Making Class, we'd like to cook with seasoned (elderly) Italian chef. The cooking class can be anywhere along our travels - Rome, Florence or Tuscany.
We'd like a Cheese Farm tour in Tuscany and Truffle Hunt in Chianti region. We are traveling in late May/early June. Any recommendations will be appreciated.
If you are looking to combine lodging with a cooking class, then I would recommend Borgo Argenina :http://www.borgoargenina.it. It is located 20km from Sienna in the heart of Tuscany. The B&B is gorgeous and they have a two bedroom villa that we rented that had spacious bedrooms a private courtyard and a well appointed kitchen. The cooking class is taught on property by Elena. We made a full Tuscan meal, including fresh pasta. The only thing is that you will need a car to reach this property.
She recommended truffle hunting with a local chef (here is the information: http://www.borgoargenina.it/activities-tuscany). We did not go as it was too early in the a.m., but we ate at the restaurant and if you like truffles, you will salivate over the abundance of truffles in each course. For 39 Euros per person, we had a 4 course meal and wine. Would have paid over $250 in the US given the number of truffles you get. Amazing experience.

I have no experience with a cheese farm or truffle hunt but, I can recommend Chef Paolo Monti's cooking class in Lucca. He had several offerings including a pasta making class. If you google his name, his web site should come up.
I have toured this amazing farm and dairy twice, and they offer cheese making and truffle hunting. They are near Pienza. Highly recommend!:
