Looking for good Italy Cooking Tour

My wife and I would like to plan a trip to Italy, to learn how to cook Italian food, in several different regions of Italy. We are flexible to the time of year and plan to stay 7-10 days. When we were in Italy 2 years ago, we ran into a tour that was traveling throughout Italy cooking, but all I can find are tours in one city or for 2-3 days. I do not think you can truly experience or learn the multitude of cooking styles in that length of time.

Does anyone have any experience with these types of tour and can recommend a good one?
