logistics of departing from Rome Fiumicino (FCO) airport early Sunday morning in June

Hello,
we are deporting Rome's main airport (FCO) on a Sunday in June around 8am for Frankfurt Germany (i.e. intra-European Union flight).
After we will have travelled for about 10 days (starting in Rome) we will return for the preceding Friday and Saturday night. Friday night we will stay at a hotel close to La Sapienza University (slightly northeast of Termini train station) to visit colleagues there .
Since the flight leaves early we are wondering if we should stay in the same hotel for the second night, and enjoy the full day in Rome. Or: should we transition to a hotel close to the airport, leaving the city by early Saturday evening?

Does someone in the Forum know how many hours ahead of departure one needs to be at FCO for inner-European flight?

Does it make sense to get up extra early Sunday night and take a taxi from the hotel (Hotel is just outside of the Aurelian Wall fixed taxi fee zone; we don't want to hassle with Leonardo Express train at that time - we will have had plenty of train travel!) to FCO? Or would that be potentially so stressful that being just 2-3 miles from the airport for the last night would be better even though it's more trouble on Saturday evening, and requires luggage storage (at hotel or Termini Station) till departure time.

Many thanks for your insights!
While I am originally from Europe this is my first time in Rome, and don't know the specifics.

You should be at the airport 2 hours prior to departure
I would stay in Rome the night before and have hotel call for a taxi in the morning
Leave Rome about 5:15
