Where in the Dolomites?

It came as a bit of a shock to me how luxurious most of the lodging is in the Dolomites.
At least in the Val Gardena area.
Costs were not cheap but not expensive and considering the high standard of service actually very reasonable I thought.
Most of the hotels in that area are 5 star level of service and amenities and typically all include multi-course dinners and breakfast in their pricing or roughly cost the same if you don't include dinner.
My point is their may be some initial sticker shock since dinner is included but the overall value I thought was very impressive for what you get.
We stayed at the Hotel Genziana in Ortisei and very glad we did, service and amenities about as high as any place in the world I have ever stayed but honestly it seemed like all of the hotels had a similar philosophy for this region.
When I had looked at some more rustic stays / smaller B&B's they had fairly long minimum stays from what I recall.
The question is broad , as is the geographical area , so the answer depends on several issues - 1 ) how long are you staying ? 2 ) Are you relying on public transportation , or will you have a car ? 3 ) What do you want to do with your allotted time ? You can consider my plans for this coming October as a guide - I am staying in Bolzano and using public transportation . By staying in town , I have under an hour to get up to Compatsch to wander The Alpe di Suisi . A car will go the same route and won't get me there any sooner . I can also go up to Oberbozen and Klobenstein by lift and rail easily from town . If the weather is questionable , there are points of interest in Bolzano ( Otzi , for example ) which will have more appeal than staying further up into Castelrotto , Seis or toward the Val Gardena . I will be there for five days , and if I were to be there longer and a bit earlier in the season , I would consider a car , and head toward Ortisei and The Sella Pass . The whole area up there looks positively charming . So , it's all a matter of judging the options .
Time of year matters. Bolzano is a very nice place, but it can be very hot in mid-summer (as can the other towns along that rail line, like Bressanone). And a lot of the moderate hotels in that area do not have air conditioning. A/c is something you'd be very unlikely to need if you stayed at altitude, somewhere like Ortisei.

Thanks to all who replied- have decided to put off the Dolomites to another trip due to time constraints. As usual tho the advise on here is A+!
I am interested to go to Dolomite, Bolzano area , early June 2018.
Looking for reliable, reasonable B&B for 4 nights.

We stayed at Hotel Monza in Moena which came with breakfast and traditional dinner each day. The owners were nice, and the town and area were very charming - scenery was gorgeous.
We took the train up from Verona and bus from Trento to Moena.
