Lodging in San Casciano dei Bagni or Chiusi/Chiantiano Areas

My sister and I are attending a wedding at Il Poggio in San Casciano dei Bagni in late November. We are taking the train from Rome to Chiusi, and do NOT plan to rent a car. We would like to stay 4 nights in one place in Tuscany, and take day trips from there.

I'm thinking we would take a taxi to and from the wedding, and a train to do other day trips. Would it be better to stay close to the wedding location in San Casciano dei Bagni or use Chiusi / Chiantiano close to the train as our base? That way, we would only have to use a taxi to and from the wedding, and could take the train to Florence or other areas for our day trips. We are interested in moderately priced lodging and food.

It appears that there are many hot springs in this area. Is that an option in late November? What about wine and olive excursions at that time of year? Suggestions?
